Minty Choc Bars

If you’re a fan of mint, this one is for you! This Minty Choc Bars recipe is vegan, gluten-free and refined sugar free. Best of all, it contains the refreshing GLOWING GREENS Ayurvedic supplement for healthy skin.

Recipe Serves: 8 bars


INGREDIENTS

Base:

  • BOTANISTRY GLOWING GREENS, 2 tablespoons
  • Dates (pitted), ¾ cup
  • Coconut oil (melted), 2 tablespoons
  • Walnuts, 1 cup

 

Creamy Mint Filling:

  • Cashews (soaked overnight or 4 hours), 1 cup
  • Coconut cream, ½ cup
  • Dark chocolate, ½ cup
  • Coconut oil (melted), ¼ cup
  • Cold water, 2 tablespoons
  • Peppermint extract or essential oil, 1 teaspoon
  • Maple syrup, 2 tablespoons

METHOD

  1. For the base, place all the ingredients for the base in a food processor and blend until it forms a crumb-like consistency. Press into a lined loaf tin and store in the freezer for at least an hour.
  2. For the creamy mint filling, it is important to have a high-speed blender to achieve a smooth creamy consistency. Blend all the ingredients on high speed for 1 minute, scraping down the blender sides as you go.
  3. Pour the filling mixture over the base, place back in the freezer, allowing to set for at least 1 hour.
  4. Melt the dark chocolate and pour over the top. Add some cacao nibs for extra crunch. Place in the freezer for at least another hour to set fully.

TIPS & TRICKS

  • Run your knife under hot water before slicing.
  • Batch-make and store in the fridge for snack time as desired.
