Chickpea & Cauliflower Nourish Bowl

Try this fibre- and micronutrient-rich Chickpea & Cauliflower Nourish Bowl recipe to support the body’s natural immunity.

INGREDIENTS

Roasted cauliflower & chickpeas:

  • BOTANISTRY BOOSTING AMBERS, 2 teaspoons
  • Cauliflower, ½ head
  • Chickpeas, 1 can
  • Coconut oil, melted, 2 tablespoons
  • Salt, ½ teaspoon
  • Black pepper

To build each bowl:

  • Red quinoa, cooked, ½ cup
  • Fresh salad leaves, ½ cup
  • Zucchini noodles, julienned, ¼ cup
  • Avocado, ¼
  • Sesame seeds, 1 teaspoon
  • Sauerkraut, 1 tablespoon
  • Spring onion to garnish
  • Fresh lemon to dress your bowl

METHOD

  1. Preheat your oven to 180°C. Cut the cauliflower into florets; drain and rinse the chickpeas.
  2. In a small bowl, mix together the melted coconut oil, BOOSTING AMBERS, salt and black pepper.
  3. Lay the cauliflower and chickpeas on a baking tray and add the oil mixture. Toss until everything is well coated. Bake for 30-40 minutes.
  4. Build your bowl with the other ingredients.

TIPS & TRICKS

  • The fresh lemon works well as a dressing or you can add a little coconut yoghurt for creaminess.
  • Any leftover cauliflower and chickpea can be stored in the fridge for a couple of days, which can be easily added into meal prep and work lunches.
  • Try different salad, vegetable and grain combinations so you never get bored!

Cauliflower is a great source of fibre and micronutrients like phosphorus, potassium, vitamin C, folate and vitamin K1. In addition, like other cruciferous vegetables, they contain compounds called glucosinolates, which can convert to the valuable anti-cancer phytonutrient – sulforaphane. Chickpeas are an excellent source of soluble fibre and plant-based protein. They also contain zinc and copper, which are key minerals to support the functioning of immune cells that support a stronger immunity.
