Tropical Chia Pudding

Transport yourself to the Tropics! This chia pudding serves as a healthy treat or breakfast for the whole family. There are plenty of high-quality proteins, antioxidants and Omega-3 fatty acids in chia. The combination of superfood chia with vitamin C-rich tropical fruits and ACTIVE CORALS help to support blood circulation, mobility and recovery.

INGREDIENTS

  • BOTANISTRY ACTIVE CORALS, 1 level teaspoon
  • Chia, 2 tablespoons
  • Coconut milk, 6 tablespoons
  • Pineapple, 2 slices, chopped
  • Banana, 1, sliced
  • Passion fruit, 2 tablespoons
  • Pomegranate, 2 tablespoons
  • Lime, 1 squeeze
  • Honey or maple syrup, 2 teaspoons (optional)

METHOD

  1. Stir the chia seeds and coconut milk into two glasses. Set aside for 5 minutes or keep overnight to become a gel-like texture.
  2. Grill the pineapple and banana to add a caramelized flavour (optional). Place the slices into each glass.
  3. Stir the ACTIVE CORALS and honey into the chia mixture. Assemble the other fruits and squeeze lime over the top.

TIPS & TRICKS

  • Another plant-based milk like cashew or almond can be used. Alternative fruit choices include papaya, mango and kiwi fruit. Add toasted coconut and nuts for some crunch.
