Lemon Bliss Balls

These zesty Lemon Bliss Balls tick all the boxes! They’re a healthy vegan snack packed with immunity-boosting ingredients. Containing no refined sugar, they’re a great way to satisfy hunger and sweet cravings. The fresh, citrus aroma is uplifting – especially in winter.

INGREDIENTS

  • BOTANISTRY BOOSTING AMBERS, 2 teaspoons
  • Medjool dates, 12 (pitted)
  • Rolled oats, 1 cup
  • Almonds, ½ cup
  • Chia seeds, 1 tablespoon
  • Lemon juice, 4 tablespoons
  • Lemon zest, ½ teaspoon
  • Vanilla extract, 1 teaspoon
  • Desiccated coconut, ½ cup (for dusting)

METHOD

  1. Soak the dates in hot water for 10 minutes. Once the dates are soft, place them in a blender. Save the leftover date water.
  2. Add all the ingredients into the blender and blitz until the mixture comes together. If the mixture is too dry, add a tablespoon or two of the date water.
  3. Scoop the mixture and roll into small balls. Then roll over the desiccated coconut.
  4. Place in an airtight container in the refrigerator for an hour.

TIPS & TRICKS

  • For a change, you can add some dried blueberries or cranberries.
  • As an alternative, you can swap the chia seeds for hemp seeds and the almonds for cashews.
  • The bliss balls can be stored in an airtight container in the fridge for up to 2 weeks and in the freezer for 2 months.
