Asparagus, Pea & Lemon Soup

INGREDIENTS

Soup:

  • BOTANISTRY GLOWING GREENS, 2 teaspoons
  • Asparagus spears, 250g (tough ends snapped off)
  • Juice of ½ lemon
  • Olive oil, 2 tablespoons
  • Sea salt, 1 teaspoon
  • Peas, 150g (plus more, for serving)
  • Vegetable stock, 1 cup

Dukkah:

  • Hazelnuts, 50g
  • Cumin seeds, 1 teaspoon
  • Caraway seeds, ½ teaspoon
  • Cardamom, ground, ¼ teaspoon
  • Coarse salt, 1 teaspoon
  • Zest of 1 lemon

METHOD

  1. Preheat oven to 180°C.
  2. In a roasting tray, toss asparagus spears with lemon juice, olive oil and salt. Roast for 15 minutes, until tender and lightly browned.
  3. Transfer ¾ of the roasted asparagus to a medium pot, along with the roasting juices. Add peas, vegetable stock and GLOWING GREENS. Using a stick blender, blend until smooth. Heat over low fire while you make the dukkah.
  4. To make the dukkah, roast hazelnuts for 10 minutes until toasted. Meanwhile, toast cumin seeds, caraway seeds and cardamom in a dry pan until fragrant.
  5. Transfer hazelnuts and toasted seeds to a small food processor, along with coarse salt and lemon zest. Pulse for just a few bursts, until hazelnuts are chopped but not too fine.
  6. To serve, divide soup into two serving bowls. Top each with a spoonful of peas, a few spears of roasted asparagus, a sprinkle of dukkah and some lemon zest. Enjoy hot.

TIPS & TRICKS

  • If you do make extra, this soup can be kept refrigerated for about 5 days and lasts at least a month in the freezer.
  • Save the woody ends of asparagus stems and boil them for a broth or vegetable stock.
  • Add oats or potatoes to thicken the soup. For a creamier non-vegan soup, add cream and parmesan.
