Pea & Mint Soup

Peas and mint go well together in flavour, and also in function with peas having protein, fibre and plenty of skin-loving nutrients that help in the production of collagen. Boost this refreshing soup by adding GLOWING GREENS, which contains superfood moringa and mint to help revitalise skin and hair.

INGREDIENTS

  • BOTANISTRY GLOWING GREENS, 4 teaspoons
  • Extra virgin olive oil, 2 tablespoons
  • Butter, 25g
  • 1 medium red onion, chopped
  • Garlic, 3 cloves
  • Peas, 3 cups (fresh & shelled or frozen)
  • Mint leaves, 1 cup, chopped
  • Vegetable stock, 2 cups
  • Parmesan cheese, grated, ½ cup
  • Pepper & salt to taste

METHOD

  1. Heat the oil and butter in a saucepan. Add the onion and cook until the onion is soft, stirring continuously to avoid burning.
  2. Stir in the peas, mint and vegetable stock, and allow it to simmer for about 15 minutes.
  3. Add the GLOWING GREENS and blend the soup until it is creamy, preferably with an immersion blender. Take care if using a food processor.
  4. Serve into bowls and top with the parmesan cheese or Greek yoghurt.
  5. Season with salt, pepper and a drizzle of olive oil.

TIPS & TRICKS

  • Leave out the butter and cheese for a lighter, vegan version.
  • Add only ½ cup of vegetable stock and blend a little less for a minty pea mash – a delicious side dish.
