Mango & Date Loaf

When we found ourselves with some overripe mangoes, we decided to create a recipe! This is our Mango & Date Loaf recipe – ideal as an after-school or pre-workout snack. It’s vegan, gluten-free, refined sugar free and features ACTIVE CORALS Ayurvedic supplement powder.

Recipe Serves: 1 small loaf


INGREDIENTS

Dry ingredients:

  • Oats (ground into oat flour), 1 cup
  • Coconut flour, 1 cup
  • Baking powder, 1 teaspoon
  • Salt, ½ teaspoon
  • BOTANISTRY ACTIVE CORALS, 1 tablespoon

 

Wet ingredients:

  • Ripe mangoes (de-seeded), 2 cups
  • Coconut milk, 2 cups
  • Maple syrup, ½ cup
  • Coconut oil, 3 tablespoons
  • Apple cider vinegar, 1 tablespoon
  • Vanilla extract, 1 teaspoon
  • Dates (pitted & chopped), 10

METHOD

  1. Preheat the oven to 200°C. Lightly spray your loaf pan or tray with oil and set aside.
  2. Mix the dry ingredients together in a bowl.
  3. In a blender, blend all the wet ingredients together.
  4. Gently pour the wet mixture into the bowl of dry ingredients, and combine into a thick, sticky dough.
  5. Pour the dough mixture into your loaf pan or tray. You can sprinkle a little desiccated coconut over the top.
  6. Bake the loaf uncovered for 35-40 minutes until the top is golden brown. Check if it is fully baked by inserting a toothpick in the centre and seeing if it comes out clean.
  7. Once ready, place the loaf on a cooling rack. Slice and enjoy with your favourite nut butter or some maple syrup!

TIPS & TRICKS

  • Canned mango or ripe peaches and apricots can also work for this recipe. If preferred, you can use only oats without the coconut flour and replace the coconut milk with oat milk.
  • Feel free to add some chopped almonds or pecans for crunch and added nutrition.
  • This loaf can be refrigerated for up to 4 days or frozen for a month to eat as needed.
