Spiced Apple Waffles

These Spiced Apple Waffles are perfect for slow weekends… They’re vegan, gluten-free and refined sugar-free with warming Cinnamon notes. The family-friendly recipe features the ACTIVE CORALS blend with potent anti-inflammatory ingredients.

INGREDIENTS

Sautéed Apple (For toppings and also for the batter):

  • BOTANISTRY ACTIVE CORALS, 1 teaspoon
  • 1 green apple, cut into cubes
  • Vegan butter, 1/2 tablespoon
  • Coconut sugar, 1-2 tablespoons

Dry Ingredients:

  • BOTANISTRY ACTIVE CORALS, 2 teaspoons
  • Buckwheat flour, 130g
  • Rolled oats, 30g
  • Coconut sugar, 30g
  • Baking powder, 2 teaspoons

Wet Ingredients:

  • 1 grated apple or 1/3 cup apple sauce
  • Vegetable oil, 60g
  • Almond milk, 200 ml
  • Maple syrup, 30g
  • Vanilla extract, 2 teaspoons

METHOD

  1. Combine all the dry ingredients together in one bowl and all the wet ingredients in another bowl.
  2. Pour the wet mixture into the dry. Whisk till all combined. If the batter is a bit too thick, add a bit more almond milk.
  3. Fold half the sautéed apples and combine well. Pour the batter into the preheated waffle maker.
  4. Flip over and it takes around 7-10mins. Then take it out and place them on your favourite plate.
  5. Toppings are simply sautéed apples, coconut yoghurt, desiccated coconuts and maple syrup.

TIPS & TRICKS

  • Protein or collagen powder of your choice can be added with the other dry ingredients in this recipe.
  • The recipe works with pears too.
