High Energy Bites

This raw, vegan grab-and-go snack is free from refined sugar, yet tastes like an indulgent treat. The almonds, dates and peanut butter pack a punch of nutritious energy. Best of all, the creamy nutty flavours work well with the aromatic cinnamon notes in ACTIVE CORALS.

Recipe Serves: 10 balls

INGREDIENTS

  • BOTANISTRY ACTIVE CORALS, 4 teaspoons
  • Almonds, 1 cup
  • Dates, pitted, ½ cup (soften in hot water if very dry)
  • Peanut butter, ¼ cup
  • Coconut sugar, ¼ cup
  • Almond milk, 1 tablespoon (as needed)
  • Pinch of salt

METHOD

  1. Add the almonds to a blender or food processor and blitz to a finely-ground consistency.
  2. Add the ACTIVE CORALS, dates, peanut butter, coconut sugar and salt, and blend well.
  3. Add the almond milk as needed for a sticky consistency.
  4. Scoop out the mixture and roll into balls. Roll the balls in some ACTIVE CORALS or desiccated coconut for a truffle-like appearance.
  5. Place in the fridge or freezer for 30 minutes to set, and then enjoy!

TIPS & TRICKS

  • Substitute the almonds with protein powder for a pre- or post-workout snack. Add some chocolate chips for a dessert-like treat.
  • The bites can be stored in an airtight container in the fridge for up to 10 days or a couple of months in the freezer.
