Green Fettuccine

Try Eleni’s simple recipe for Green Fettuccine with antioxidant-rich and nutrient-packed GLOWING GREENS, adding a flavoursome and healthy twist to the ultimate comfort food.

INGREDIENTS

  • BOTANISTRY GLOWING GREENS, 2 teaspoons
  • Flour, 1 cup
  • Semolina, 1 cup
  • Water, 2/3rd cup
  • Olive oil, 2 teaspoons
  • Salt, ½ teaspoon

METHOD

  1. Mix flour, semolina, salt and GLOWING GREENS together in a bowl. Make a well in the middle, then pour in water and olive oil.
  2. Mix until a dough forms, knead into a ball, cover and refrigerate for 30 mins.
  3. Divide dough into four and feed through a pasta maker until the second to last setting. Then feed through the fettuccine cutter.
  4. Cook in boiling water for about 5 minutes and service with the sauce of your choice.

TIPS & TRICKS

  • Make a quick creamy cashew sauce by blending cashews (soaked for 2 hours), water / broth, garlic and salt. Add extra ingredients like peppers, pesto or chilli paste to change the flavour.
