Broccoli & Pea Savoury Pancakes

Using: BOOSTING AMBERS

Broccoli and peas are a good source of vitamin C and fibre, are anti-inflammatory and rich in antioxidants, while peas are also high in plant-based protein. BOOSTING AMBERS is the perfect addition to this quick and versatile recipe to help support the body’s natural immunity.

INGREDIENTS

Pancakes:

  • BOTANISTRY BOOSTING AMBERS, 1 teaspoon
  • All purpose flour, ½ cup & 1 tablespoon
  • 3-4 broccoli florets, sliced
  • ½ cup frozen peas, defrosted
  • 1 spring onion, sliced
  • 1 cup water
  • Salt & pepper to season
  • Olive oil for frying

Dressing:

  • BOTANISTRY BOOSTING AMBERS, 1 teaspoon
  • Tahini, 1 tablespoon
  • Half lime / lemon juice
  • Olive oil, 1 tablespoon
  • Water, 1 tablespoon
  • Salt & pepper to season

METHOD

  1. In a mixing bowl, mix all the ingredients for the pancakes until well combined.
  2. In a frying pan, grease the pan with olive oil, pour half of the mixture into the pan evenly, cook pancake on medium heat and flip to get both sides nicely golden.
  3. In a small bowl, mix all the ingredients for the dressing until smooth.
  4. Garnish pancakes with fresh choice of herbs or salad and drizzle with dressing.

TIPS & TRICKS

  • For a non-vegan version, add egg, ½ cup milk and cheese instead of water. By adding eggs and no flour, it can be a frittata.
  • This versatile recipe is perfect for using up leftover vegetables.
