Harriet’s Breakfast Loaf

Nutritionist Harriet Lidgard’s breakfast loaf recipe is a must try! It’s versatile, vegan and refined sugar free. Enjoy it for brunch or afternoon snack. Incorporating ACTIVE CORALS Ayurvedic powder, it is a good source of energy, fibre and can help regulate blood sugar levels.

INGREDIENTS

  • BOTANISTRY ACTIVE CORALS, 2 teaspoons
  • Dates (roughly chopped), 10
  • Bananas (ripe & mashed), 2
  • Olive oil, ¼ cup
  • Almond milk, ½ cup
  • Maple syrup, 2 tablespoons
  • Rolled oats, 1¼ cup
  • Buckwheat flour, 1¼ cup
  • Baking powder, 2 teaspoons
  • Baking soda, ½ teaspoon
  • Salt, 1 pinch

METHOD

  1. Preheat the oven to 180°C fan bake. Line a loaf tin with baking paper.
  2. Roughly chop dates and place into a bowl. Cover with boiling water and let soak for 10 minutes before draining.
  3. Mash banana with a fork. Add oil, milk and maple syrup, mix to combine.
  4. In a separate large bowl, add oats, flour, ACTIVE CORALS, baking powder, baking soda and salt. Mix together before adding wet ingredients and dates. Fold mixture together until just incorporated, do not over mix.
  5. Pour into lined loaf tin and spread out evenly. Bake for 20-25 minutes until golden and cooked through. Let cool for 10 minutes before removing from tin and cooling on a rack.
  6. Serve warm with your preferred toppings, like nut butter, berry compote, yoghurt or sliced fruit.

TIPS & TRICKS

  • To check if the loaf is cooked through – insert a skewer into the centre. It should come out clean if the loaf is cooked.
  • This breakfast loaf keeps well in the freezer. Simply slice, freeze and remove slices as you wish. Toast slices in a toaster to warm when ready to eat.
